Fresh encounter between matcha and mint

Matcha and mint jelly: a treat for adults

Enjoy the refreshing flavor of black tea combined with the sweet scent of mint. A delicious jelly with a beautiful dark green color.

Ingredients (for 3 containers of 150 ml)

  • Matcha: 4 g
  • Powdered gelatin: 5 g
  • Water (for gelatin): 15 ml (1 tablespoon)
  • Sugar: 25 g
  • Mint leaves (spearmint or other): 5 g
  • Hot water: 200 ml
  • Cold water: 100 ml (for mixing at the end)

Preparation

  1. Prepare the gelatin
    Pour the powdered gelatin into 15 ml of water and let it hydrate.

  2. Mix the dry ingredients
    Pass the matcha through a tea strainer to avoid lumps. In a bowl, mix the sifted matcha with the sugar using a whisk.

  3. Mint infusion
    Place the mint leaves in a bowl and pour 200 ml of hot water over them. Let it infuse, then filter to keep only the liquid.

  4. Combine it all
    Add the matcha and sugar mixture (step 2) to the strained mint liquid, and mix evenly. Then add the prepared gelatin (step 1) and mix until completely dissolved. Add 100 ml of cold water and mix again.

  5. Cool down
    Place the bowl in an ice water bath and stir occasionally until the mixture thickens.

  6. Refrigerate
    Pour the mixture into containers. Refrigerate for at least 3 hours, or until the jelly is set.

  7. Serve
    Garnish with fresh mint leaves when serving.
