Tofu and minced meat stew
For 2 people Ingredients:
- 1 block of firm tofu
- 100 g minced pork
- Grated ginger: 1 piece
- 1 tbsp sake and water (mixture A)
- 1 tsp soy sauce
- Potato Starch: Proper Amount
- 2 tsp salad oil
- 1 cup dashi (mixture B)
- 1 ½ tbsp soy sauce
- 1 tbsp each sugar and mirin
- Spinach: 200 g
Instructions :
- Prepare the tofu : Cut the tofu into three slices.
- Prepare the meat : In a bowl, mix the ground pork with A (sake, water, soy sauce), adding the ingredients in order and mixing well each time.
- Assemble the tofu and meat : Dust a piece of tofu with potato starch, spread half of the meat on top, dust with more potato starch, and layer another piece of tofu on top. Repeat to create a layered structure. Let rest for 10 minutes, then cut into 4 equal pieces.
- Cooking : Heat oil in a pan over medium heat and fry each side until golden brown. Add mixture B (dashi, soy sauce, sugar, mirin) and simmer for 7-8 min. Add cornstarch to thicken if necessary.
- Prepare the spinach : Boil the spinach in salted water, drain, cut into 3 cm pieces.
- Serve : Place the tofu and meat pieces in a bowl, add the spinach on top.
Steamed tofu and smoked salmon millefeuille
For 2 people Ingredients:
- 1 block of firm tofu
- 12 slices of smoked salmon
- Flour, salt, pepper: to taste
- 4 slices of lemon
- 2 tbsp white wine
Instructions :
- Prepare the tofu : Cut the tofu into 4 equal slices.
- To assemble : Dust a piece of tofu with salt, pepper and flour, place 3 slices of salmon on top, add another layer of flour, and layer another piece of tofu on top. Repeat with the rest.
- Steam cooking : Arrange the millefeuilles in a heat-resistant dish, sprinkle with white wine, place in a steamer, and cook for 10 minutes over medium-low heat.
- Garnish : Garnish with lemon slices before serving.
Tofu with menma and cucumber
For 2 people Ingredients:
- 1 block of silken tofu
- 50 g of seasoned menma
- ½ cucumber
- 3 cm green onion
- ½ tsp vinegar
- ½ tsp soy sauce
Instructions :
- Prepare the ingredients : Tear the menma into thin strips. Cut the cucumber into thin, diagonal slices, then slice the green onion. Cut the tofu in half horizontally.
- Assemble : Place the tofu in a bowl, then top with the menma, cucumber and green onion mixture. Add the vinegar and soy sauce on top.
Tofu with Kimchi and Natto
For 2 people Ingredients:
- 1 block of firm tofu
- 50 g Chinese cabbage kimchi
- 1 packet of natto (50 g)
- A few drops of sesame oil
Instructions :
- Prepare the kimchi : Roughly chop the Chinese cabbage kimchi.
- To assemble : Cut the tofu into 2-3 cm cubes, place them in a bowl, then top them with the kimchi and natto mixture. Drizzle with a little sesame oil for flavor.
Tofu with tomatoes and anchovies
For 2 people Ingredients:
- 1 block of firm tofu
- ½ tomato
- 4 anchovy fillets
- 5 to 6 basil leaves
- Salt and pepper, to taste
- 2 tsp olive oil
Instructions :
- Prepare the ingredients : Cut the tomato into 4-5 mm thick slices. Finely chop the anchovies and tear the basil leaves if they are too large.
- Assemble : Cut the tofu in half horizontally, place in a bowl, sprinkle with salt and pepper. Top with basil, then tomato and anchovies, in that order. Drizzle with olive oil and garnish with additional basil leaves.
Tofu with avocado and nori tsukudani
For 2 people Ingredients:
- 1 block of silken tofu
- ½ avocado
- 1 tbsp. of nori tsukudani
- 1 tsp grated wasabi
Instructions :
- Prepare the avocado : Scoop out the flesh of the avocado using a spoon.
- Assemble : Cut the tofu in half horizontally, place in a bowl, then add the avocado. Then top with the nori tsukudani and wasabi mixture.
Tofu with smoked salmon
For 2 people
Ingredients :
- 1 block of firm tofu
- 4 pieces of smoked salmon
- ½ all-purpose green onion
- ½ sudachi quarter
Instructions :
- Prepare the onion : Thinly slice the green onion diagonally.
- Assemble : Cut the tofu in half horizontally, place in a bowl, top with smoked salmon, green onions and add the sudachi wedges.
Sesame Tofu
For 2 people
Ingredients :
- 1 block of silken tofu
- ½ packet of katsuobushi (about 2 g)
- 1 tbsp ground white sesame
- ½ tsp soy sauce
Instructions :
- Prepare the radish : Cut the marinated radish into very thin slices.
- Assemble : Cut the tofu in half horizontally, place in a bowl and cover with the katsuobushi, sesame and soy sauce mixture.

Boiled Tofu
For 2 people
Ingredients :
- 1 block of firm tofu
- 10 cm of kelp
- 3 cups of water
- ¼ cup vinegar
- 1 tablespoon of mirin

- 1 packet of kezuribushi (3 g)
- ¼ cup soy sauce
- ¼ cup water

For mixture C:
- 2 small pieces of all-purpose green onion
- 2 pieces of grated ginger
Instructions :
- Prepare the tofu : Cut the tofu into 6 equal pieces.
- Prepare the kelp : Soak the kelp in enough water for 1 hour.
- Prepare the broth : In a saucepan, add ingredients A (water, vinegar and mirin), heat over high heat until boiling, then reduce the heat to medium and simmer for 2 minutes. Add mixture B and bring to a boil again before turning off the heat.
- Boil the tofu : In a separate pot, put the tofu and kelp, heat over medium heat until the tofu begins to boil gently. Then add the mixture C (green onion and ginger).
Homemade Fried Tofu
For 2 people
Ingredients :
- 1 block of silken tofu
- Proper amount of frying oil
- Soy sauce - to taste
- Grated wasabi - appropriate amount
Instructions :
- Prepare the tofu : Cut the tofu into 4 equal parts.
- Fry the tofu : Heat the frying oil to 160℃, add the tofu and fry for about 10 minutes, turning occasionally until golden brown.
- Serve : Place the fried tofu in a bowl, drizzle with soy sauce and garnish with wasabi.
